The EyeTV only offers standard definition inputs for video capture. The HD only comes from HD TV broadcasts (unencrypted over-the-air and cable). So the answer is, no, you can't record an HD PS3 feed.

What about the MacTV? could I use that to record from my PS3? I'm sorry for all the questions, I'm new to the MAC and the people who work at the store don't seem to know a damn thing.

If you have a way to split the output from the PS3 (I don't know if the HDMI and analog video outputs can be used simultaneously on the P3) then you should be able to record in standard definition using either an s-video or composite input into the EyeTV. However, as noted in the link I provided earlier there will be a delay between what is happening on the PS3 and what appears on the Mac when recording. See the link for details.
