I have a Space Gray 14" MBP 10/16/16GB/1TB. I think there was only one time it ever broke a sweat and that was when I stupidly imported 30,000 pictures (RAW and JPG) at once. It took a total of 4 days to import and sync to iCloud Photos. I did this because I was playing around with the editing features of Apple Photos and it did everything I needed it to. I will be getting rid of Lightroom despite being a user since its original beta program (I started with Beta 4 in 2006).
I am seriously thinking about getting the Silver M2 MBA 8/10/24GB/1TB and selling my MBP. I don't really need the ports as I already have a dongle that I use with my 12.9" M2 iPad Pro. I am hoping that I won't notice a significant performance hit going from the 10/16 chip to the 8/10 chip. I really don't think so since I only use O365, mail, messages, Safari, and VMWare Horizon to VPN into work. The only reason that I am going with 24GB is that my current 16GB MBP is usually at 12GB memory and 400M-2GB swap during the day.
