There seems to be a bit of misunderstanding of the current situation. As it stands, right now you
cannot unlock a UK out-of-the-box 1.1.2 iPhone - even though AnySIM 1.2 has been released for the 1.1.2 software. The reason for this is that Apple have updated a part of the baseband firmware (the bootloader) and the current tools, such as AnySIM and iEraser, don't interact properly with this new bootloader and are unable to patch the modem firmware as of yet. iPhoneSimFree also does not work because it relies on modifying the bootloader to unlock the phone.
However, you
can update a US iPhone that has been updated to the new 1.1.2 modem firmware. This is because the update doesn't seem to upgrade the bootloader, and so the new AnySIM 1.2 will work. I don't know about IPSF in this case though.
Iphoneunlockuk are claiming a way to activate the phone to use it as a IPOD, if this is done, will any of the posts above work to get it to work with my O2 Simcard, or should I just sit back and wait

I would be wary of iPhoneUnlockUK. As far as I can tell, they're simply using free tools from the dev team and are totally reliant on them to release new software before they're able to unlock. There's a thread around here somewhere on them.
I'm using my UK iPhone as an iPod touch at the moment. As mentioned, this was done by downgrading the phone firmware to 1.1.1, which is a relatively simple and painless task (it took all of about 5 minutes to downgrade using iTunes and iBrickr, and another 5 to jailbreak using the i.unlock.no method) The problem is that, contrary to what I said earlier, 1.1.1 doesn't want to speak to the modem and this means your O2 cards won't work in the phone. This is probably due to some change in the modem firmware making it incompatible with 1.1.2.
However, people have been reporting that if you downgrade to 1.0.2 (also simple), you
can O2 cards in it and it will work as a normal phone. But I've also hear some others say that although the phone works, visual voicemail and EDGE don't work properly. This may be down to a simple configuration issue which apparently is fixable (see the O2 specific section
here). I have not tested this, mainly because I don't have access to an O2 SIM card.
The advice that everybody is being told is to simply wait. The current hope is that in the next couple of days, the dev team should be able to figure out the bootloader and as they have already obtained the secpack, unlocking the phone should be possible. But in the meantime you can downgrade to 1.1.1 and at least use everything but the phone part.
