The Apple instructions (linked earlier) are clear about erasing the MacIntosh HD volume group, not the drive. On M1 Macs Recovery is on a separate partition, which might get erased if you erase at drive level. Erasing at drive level was common practice with Intel. I don't know if this the cause for you but it might be. So I would be interested to know exactly what you erased.

It would seem bad if Apple even allows the whole drive to be erased and if this then causes the need for Apple Configurator 2 to restore the Recovery partition. I would hope Apple makes it impossible or gives dire warning, in which case your problem is likely to be something else.
This seems to be what some are doing, they might be only erasing macintosh hd and not the entire volume group. This is causing problems.

Did you erase the volume group or the whole drive?? Or did you just remove the Macintosh HD and left the Macintosh HD - Data?

I erased the whole drive just as I did with 12.0 which worked fine for internet restore. But 12.0.1 internet restore did not work causing the issue here

Oh yeah. Tbh I still think it's prob because of the non existent full installer on the server. It's prob why it errors out trying to pull the full installer for the RC

Yeah I think so as well. But it shouldn’t be broken like that.

Yeah. It's nice though to know that we can clean install everything like how we used to in Intel based Macs. Just select the disk (Apple SSD xxx) and just erase. Then just reinstall.

There can be several reasons responsible for interrupting your Mac’s update process:

1. Lack of free space on Mac.
2. Software malfunction.
3. Internet connection with slow speed.
4. System errors interfere with the updates.
5. Non-responsive update servers.
6. Old install data interfering with updates.

However, you can try the below DIY methods to fix the issue:

1. Ensure sufficient storage space availability.
2. Inspect your Internet connection.
3. Shut down Mac and switch it on
4. Check Apple Update Server
5. Boot your Mac in Safe Mode
6. Remove the older macOS install data
7. Rectify the Software Update preferences

Hope it helps!
