If they base their work off the PS3 port then it shouldn't take them long at all (maybe 3 months). Of course that is assuming that they understand how the PS3 version works. I say the PS3 version because it doesn't use DX at all, it runs using at least OGL. So it should be the easiest to port from. Well that is also assuming that they are actually porting UE3 and not going to cop out and just run cider to translate calls.
How is a program identified if its using Cider?
 
You do know that the UT3 engine is already ported to the Mac. It's unlikely they'll port the rest from the PS3 port. They're more likely to port it from the linux/windows version as the features of that version are closer to the features they want on the Mac.

It'll be here sometime early next year. Ryan probably has an early alpha/beta build up and running and is just optimizing it and squashing bugs.
UE3 = Gears of War, Mass Effect, Unreal Tournament 3, etc. It is the engine (the e part in UE3). If that is already ported to the Mac then there really shouldn't be any coding changes needed for UT3 the run on the Mac. So I would expect it to be ready to go by February.

How is a program identified if its using Cider?
Not sure.
 
Specs: iMac 2.4GHz, 4GB of RAM
UT3 FPS: 30-35, sometimes 40. It runs pretty good, if you set everything to "3"

I'm running it on my MBP full settings and no AA working great so far
getting 35-40FPS
