Recently, I have been running performance tests between VMware Fusion 4.1 and the latest build of Parallels Desktop 7, and while Parallels seems to perform slightly better for gaming, there is something odd about the way it handles modifier keys like Ctrl and Alt that makes it unusable for my purposes.
VMware's support is head and shoulders better than Parallels'.
Lastly, Parallels likes to pelt you with ads when you start the program.
I also tried VirtualBox with Windows 7, and found it horribly slow during PXE boot (as mentioned above), and also somewhat unstable even in the F8 menu, often crashing without my having to touch anything. There was a weird issue in Windows where mouse clicks wouldn't register unless I moved the pointer. Possibly a configuration issue, but you think this sort of thing would work out of the box. I see VirtualBox as something of an uncertain quantity and would hate to blow a Windows license on it.
In general, I would recommend VMware Fusion 4.
