Kindle (on iPP 10.5). Have long stopped using my original Kindle e-reader and Paperwhite in favor of the iPad. This is my most-used app, hours per day.
FileBrowser, both for on-board file management and access to off-line storage.
nPlayer, Netflix, and Prime Video for movie & video watching.
Picture Manager Pro for on-board photo storage/viewing.
AltaMail for email - has full-page (no sidebar) reading in landscape mode.

I'm retired so the iPad is primarily a consumption device for me.
 
Google Drive, Google Calendar, Pinterest.
Pinterest helps me to discover many delicious recipes, style inspiration, useful and essential tips for work and sport.
 
1Password for all my passwords on iPhones, Laptop and Desktop.
OTP Auth for OneTimePasswords.
Edison Email to check all of my email accounts.
Fantastical 2 to plan meetings.
TomTom Go Mobile to drive from Home to Work and back.
Threema to chat with my family.
Twitterriffic to view tweets.

Applications like Spotify, Safari and Outlook help you to get the most out of your iPhone so I can say that it is hard to live without these apps.
 
Things by Cultured Code. It’s had a prominent place on my dock since the iPhone 3G. My iPhone is my external brain and Things is how I organize my thoughts.

I’m terrible at organizing and fretful trying to understand how Things! works and how to use it. Any suggestions fellow Torontonian PM me please.
