What benefit would I get if the iPhone suddenly had 6gb of ram vs 3gb? What would I be able to do that I can’t currently do?

Keep a dozen or so apps open in the background without having them reload.

Games like Fortnite need 2GB of RAM alone. If you play a game and switch to other apps, they will reload.

I can already do that with 3GB ram. What extra benefit do I get from 6GB?
 
Reading this I’m so glad I haven’t got a shred of interest in mobile gaming lol. Sounds like I’m better off!

There are people dependent on their iPhones for work, running Cisco AnyConnect VPN, Slack, Skype for Business, ClickMeeting, etc. This is on top of their personal lives with FaceBook, Instagram, WeChat, Amazon, etc. These power users run into memory walls when these apps are all loaded. Gaming adds another big hurdle.

I’m pretty heavy on my iPhone with apps like you mention as I use mine for business and personal but thankfully I’m not into gaming.
