File system? I tested a Crucial MX500 2TB and with APFS, iPad Pro 2020 was just 1/2 the write speed compared to the same drive on M1 MacBook Air.
Yes there s variance depending on the file system. Apple File System is faster then ExFat. But then again it depends on what you copy.
My almost exclusively application is to copy and developed TIFFs or PNGs (36MP and up) FROM the iPP TO the SSDs when on field trips.
I’m using FileBrowser Professional which reports the transfer speeds as Mb/s - and on average I get 90 Mb/s +-20 Mb/s with the T5s (see screenshot; T7 is faster).

EDIT: direct transfers* initiated from the iPad Pro between 2 SSDs connected to a USB-3-hub (which connects to the iPP) are way faster.

*no intermediate copying to the iPP. One of many details which makes FileBrowser such a great app.

Does the iPad Pro 2020 support UASP mode for USB? I know this is supported on Macs and is required for unlocking the full speed of the T5, but no one has confirmed if iPadOS supports this as well.
