You can connect to external displays, via Adapter or wirelessly through Apple TV. A lot of schools and universities now have these on site from what I’ve seen.
AFAIK the iPP isn't capable of driving 2 external monitor with different apps on each of them, is it?

But that support is severely restricted and impossible to have 2 different apps displayed simultaneously (one on each display).
And then there would still be the struggle with using the apps on non-touch-sensitive external displays.

I'm into photography and music. I've been trying to go all iPad and I've run across a few things I can't get done on my iPad (Pro 12.9 128 GB) I thought, what if we throw out what is keeping us from going all iPad and maybe others can help?

In photography, Lightroom does almost everything I want, but I can't do HDR's like Photomatix. I would also like to do some editing tools like DxO Optics Pro. On the music side, I have adopted Apple Music and really enjoying it. I'm just hooked on smart playlists.

I'm sure I could work around all these items, but it sure would be nice if I could get there.

So what is keeping you from going all iPad?

Have you tried Affinity Photo?

Perhaps not, as what you see on the external display is assumably what you see on the iPad display. The 2 different apps not being able to be displayed is a different issue altogether. My point was simply that it is possible to connect to an external display - it’d be wrong to say that it’s simply impossible and misleading to people who might then assume there’s no way whatsoever when there is two options I can think of.

I don’t think that’s relevant? Somebody posted saying that the iPad can’t connect to an external displays. I just said that it could connect to external displays, which is true. Where the need for two comes into it, I’m not sure. But it can certainly connect to one and for a lot of people that’s sufficient. It’d be wrong to post that it’s completely impossible and would mislead people when they come to contemplate what they can do on an iPad

That is why I said it was "severely restricted" and didn't say it was impossible.

You said it was possible but didn't qualify the limitations of such support. Yes, it can "mirror" to an external display. There are a handful of apps, like Keynote and PowerPoint that can display something different on the external display than is displayed on the iPad itself.

Perhaps with time more developer optimisation will improve that. As more and more people go in the ‘Pro’ direction with the latest iPad and iOS we might just get improved experiences like that all the more. It’s what the Apple platform has attracted for a long time so I’d say it wont be too long for it to happen.
