AR / LIDAR. It's great tech and absolutely necessary to make something like AVP work, but it feels pretty pointless on a cell phone.

I also don't use optimized charging or the charge limit. I only charge my phone when needed, and I haven't found myself low on battery. Fast charger at home, at work, and in the car means I always have convenient access to power.
 
Magsafe, screentime, always on, any of the camera settings besides default, siri, shortcuts, most of the preinstalled apple apps.
 
Shortcuts, Back tap, Swipe to type, Notification tones (phone is always on silent), Screentime, Parental controls, Battery saving mode, any of the pride and unity stuff, Standby mode, Stickers, Contact posters, and probably 100 other things...

I have never used MagSafe either. Although I love the concept of the wallet and accessories, I’m too obsessed with Loopy cases to give them up.
 
The wide lens camera; the standard camera beyond anything required for pics of signs/documents/labels; any video/audio recording; video/audio playback; inductive charging; Siri; Facetime; emojis; dictation; Gamecentre; the iTunes Store; the App Store....

I'm sure there's a heck of a lot more. My usage of the features beyond basic phone/texting/email/browsing dropped significantly over the last 7 years or so. I did more with my Nokia N95 back in 2007.
 
All the functions the camera in my iPhone 15 Pro has. I haven't changed any settings, just using the default setup it came with. I could probably have done with a non-pro iPhone 15.

In addition to that, I also never use the Translate app, Stocks, Journal, Magnifier, Apple Books or Freeform - and fitness tracking is disabled, so the only thing the Health app measures is the sound level from my AirPods Pro.

...and I also don't use widgets on the home screen, only on the widget page.

I will say I’d LIKE to use more camera features, other than just the basic ones, but I have really never delved into all the camera can do, and I’m pretty challenged in that way, so I just point and shoot. Lol
 
Siri, Voice Memos, nearly all notifications are turned off, Health Data, Fitness, Journal, Podcasts, Stocks app, Magnifier and probably others.
 
I consider smartphones necessary evils rather than anything beneficial, and outside taking photos and making notes, the only actual use is for MFA (Multi Factor Authentication) and the occasional phone call. Thus any other “features,” whether hardware or software, are of no interest. “Always On” is a defect to me…

I use the iPad for functions that others likely use their phones for.
 
To be a bit contrary, I never used the silent switch on any of my past iPhones but now that it’s an action button I’ve set it to open the camera and be the shutter button which I use quite a lot.
