I disagree, I like the easy levels, as the RPG/Story lines is more enjoyable. The casual gaming experience is what I like and so I opt for that.
TBH it's a very personal thing. I simply prefer to see what the dev's original intention was for the game on stock difficulty settings. I also think a lot is related to your gaming taste. I really enjoy deeply immersive games such as Alien Isolation, Bioshock, S.T.A.L.K.E.R. System Shock 2, now Prey (2017).
RPG's I far prefer a Sci-Fi sitting, yet many fantasy titles are excellent plays
By any means I'm not part of the PCMR crowd with all must be played on
hardcore mode 
My honest opinion is that games are meant to be entertaining & enjoyable, not punishing.
How I approach; play on recommended difficulty settings, playthrough and see what transpires. If I get really interested in the game I'll go again at a harder difficulty level, if too difficult I'll drop it down.
I maintain the same that if your are suitably challenged, you will get more out the game. You will learn more, hone your skills and not get hung up or worse drop games. Applies to
Daggerfall to the latest release.
Now if you want to experience real hardship LOL
Radiophobia 3, full free S.T.A.L.K.E.R. game. This game is so immersive & deep graphics are irrelevant with this very challenging level of gameplay. Not for the uninitiated of the franchise or the faint of heart, equally doable with perseverance.
What I'm basically saying is that if you play easier games at a harder level, harder games will become easier. That you simply need to trust in. If on the likes of Game pass no harm no fowl. If paying for the full title very different story as a waste of $$ if you quit the game...
TLDR I like the challenge, equally you should play what & how you personally enjoy
