I think moving from 64GB to 128GB would cost more than the 100 that they are charging per model right now; probably inflating the price to the point that it would exceed what people are willing to pay.

If the cost were a mere 100 bucks then that would already be an option and people would be crying about why apple didn't offer a 256GB version.
 
My point and shoot camera has a 16GB Micro SD card. It's tiny and fits on the end of my finger. I'm sure space is not an issue. Granted the memory in the iPad is a little different, but I think Apple could have done more.

The space isn't the problem, the cost is. Apple (probably rightly so) doesn't want to put a magnetic hard drive in an iPad because of robustness and speed, so they use flash memory like all current iPods/iPhones except the classic. Flash memory is expensive, and gets quickly more expensive as you increase capacities. For a 128GB iPad they would probably end up charging something well over $900.

Like the iPods and iPhones they'll use large enough capacities to justify pricing but not so large as to push cost outside of their desired window, and adjust capacities year over year as costs decline and densities increase.

This just about sums it up but to add one small point there's also the matter of availability. Basically, there's a finite number of these memory modules and ramping up production of a certain capacity takes time and may not even be possible for various reasons. If you're going to stick, say, 4 32Gb modules in an iPad instead of 2 then you need to be able to source those modules from somewhere. If that's not possible then you can't do it, simple as that. It also increases the chance of getting a bad part as you're adding more modules with more points of failure.
 
But seriously, I got a 64gb iPad and i didn't buy it to watch movies.

No..but I did and it has worked better out better than I thought. Pop on a pair of BT headphones and you can sit and veg wherever you can find a wifi.

Just spent the weeked sneaking episodes of Firfly when I could (Holy Crap...how did I miss this show when it was out??). Luckily wifey is studying for a big exam this week...so I had to give her some quiet space to study. Der? Ok!
