Actually, there DID used to be MacAMP, but it's been out of circulation for quite a while now, AFAIK.

My favorite overall is VLC, and for three reasons:

1. It plays almost anything I ever throw at it;

2. It plays ON every modern platform I've used (Mac OS X, Linux, WinXP)

3. It's open-source, so there's no "hidden agenda" behind it.

Is there actually anything superior to iTunes on Mac OS X? Winamp is looking pretty good for Windows now, shame it isn't ported to Mac and renamed Macamp :p
There was/is an app called MacAmp and for a long time it was the best solution for playing FLAC/SHN files but it has long been superseded by Cog or Play.

As everyone else has said, QuickTime + Perian and Flip4Mac or, if you want a playlist, VLC.

Well I think Winamp should be re-written for use on Mac but unfortunately the guys over at Winamp forums are too arrogant and up their own backsides to even consider it!

Video=VLC and flip4mac for the wmv.

Audio=itunes

it would be nice to have an alternative that works as well as itunes, but they would have a lot of catching up to do.
