Took a swing at one of our favorite restaurant's signature dish.

Bone in pork chops sous vide with aromatics, then pan seared hard.

Potato latkes(pancakes) with fresh chive, and green onion

Baked spiced apple

Crème fraîche with extra hot horseradish

Great balance of flavors.

Sunday stir fry: fresh broccoli, red peppers, onions, ginger, garlic, soy sauce, some rice vinegar, a tad of brown sugar, a few ounces of chicken sliced into thin strips, and just enough rotini pasta to have to cop to the fact there was some in there somewhere. Generous dash of red pepper flakes just before tossing into serving platter.

Then I served the dish for the leftovers before serving myself... else there would be nothing left by time I called suppertime over.

After supper: I predict an effort to stick many pins in a voodoo doll that might look suspiciously like a snowman. Well at least the forecast snow will be falling on green grass, amid temperatures that suggest it can't last past noon tomorrow.

If this "not really a winter, jes' kidding" thing is still happening by around the middle of May, I'm going to build a spacecraft in the backyard in between snowstorms and seek another planet. In the meantime trying to remember that it's nice not to have to be fretting about lawnmowing yet. The snow and the bunnies are keeping the potential hayfields down to somewhere around golfing greens height so far.

I asked a store clerk a few months ago when I was doing my runs where to find the jarred stuff. On account of knowing what was going to transpire within weeks. Horseradish isn't commonly consumed here for some reason. I figured these would do for sandwiches or sauces. The shelf employee gave me a strange look when I asked where it was. I figured it's something only "old" people buy there because she gave me a quizzical look not unlike a rodent in a grain field who's been caught by the farmer late at night.

I did swing by Whole Foods to buy several large, untouched roots of the stuff. Stored them so they don't go bad anytime soon. I figured back early in the year things would sour quickly globally, so I was making several purchases of products a day. Some stuff you can't live without, and some stuff you ought to buy a large quantity of and reduce your risk of going to the green grocers. I made a trip yesterday to replenish nearly 50 days of produce. Certain apples last far longer than other apples, for example. Celery lasts forever. Ginger root lasts forever. Dried whole spices last maybe six months. Shallots and garlic will last for a long time in a cool, dry place. There's at least 15 jars of Edmond Fallot mustard in the pantry, for example. That's one of the brands I bought up. I like mustards a lot.

I may or may not have also bought a large case of imported double clotted cream from a restaurant supply store... I'll let you know how much my waistline has expanded by summer's end. Easier than going out to buy several liters of cream a week and avoiding possibly sick people.

For the time being. Takes quite a bit of cream to make clotted cream. 4 pints of the stuff gets you two medium sizes glass containers of the stuff, maybe 400 g in weight. I can make multiple dishes of clotted cream at once if I want to. Some American brands sell upwards of 2 liter containers of organic cream. It doesn't cost too much since our dairy industry is heavily subsidized.

Clotted cream with lemon curd, clotted cream with jams, clotted cream with fruit on toast, clotted cream in porridge, clotted cream in eggs, clotted cream with salmon roe, clotted cream with sturgeon caviar, clotted cream with sliced garden tomato and a pinch of salt.

Otherwise the cream is nice to have on hand. Freshly whipped cream with fruit from the garden is a lovely dessert most nights. Especially in our current streak of fiery hell.

It's probably the only "fat" food I eat a lot in the warm months. My breakfasts are usually yogurt, quark, minimal fruit, cold meusli, etc. during the warm months. Even at 7 AM during a particularly warm stream, it's almost always near 80* F. I don't remember it being this warm when I first immigrated to the US.

Well, I guess I'll grill some burgers tonight. Wahlburgers. Their burgers are a pretty good size and a good blend of chuck and brisket. Very tasty!

Yesterday started with my version of Southern Huevos Rancheros. Two eggs, over easy, freshly made grits, toast and Kiolbassa Dry Rubbed Bacon. Topped the eggs with salsa and mixed them in with the grits. It's a mess, but boy is it tasty!

And dinner last night was my wife's choice, since it was her birthday dinner. She went with gluten free fried chicken, very buttery mashed potatoes and gravy over everything!

Not enough people like horseradish these days.
I drive by this old guys place all the time, he seems 80ish when I see him out working in the garden which has gotten less often and last year I only spotted him once. He has 8 horseradish plants in his garden. Hopefully when I stop in this week he will be there, the plan is to get a couple roots to grow here before they are gone.
