Took a swing at one of our favorite restaurant's signature dish.
Bone in pork chops sous vide with aromatics, then pan seared hard.
Potato latkes(pancakes) with fresh chive, and green onion
Baked spiced apple
Crème fraîche with extra hot horseradish
Great balance of flavors.
..and just enough rotini pasta to have to cop to the fact there was some in there somewhere...

I asked a store clerk a few months ago when I was doing my runs where to find the jarred stuff. On account of knowing what was going to transpire within weeks. Horseradish isn't commonly consumed here for some reason. I figured these would do for sandwiches or sauces. The shelf employee gave me a strange look when I asked where it was. I figured it's something only "old" people buy there because she gave me a quizzical look not unlike a rodent in a grain field who's been caught by the farmer late at night.Amen to that.

For the time being. Takes quite a bit of cream to make clotted cream. 4 pints of the stuff gets you two medium sizes glass containers of the stuff, maybe 400 g in weight. I can make multiple dishes of clotted cream at once if I want to. Some American brands sell upwards of 2 liter containers of organic cream. It doesn't cost too much since our dairy industry is heavily subsidized..... a week?

Yesterday started with my version of Southern Huevos Rancheros. Two eggs, over easy, freshly made grits, toast and Kiolbassa Dry Rubbed Bacon. Topped the eggs with salsa and mixed them in with the grits. It's a mess, but boy is it tasty!

And dinner last night was my wife's choice, since it was her birthday dinner. She went with gluten free fried chicken, very buttery mashed potatoes and gravy over everything!

I drive by this old guys place all the time, he seems 80ish when I see him out working in the garden which has gotten less often and last year I only spotted him once. He has 8 horseradish plants in his garden. Hopefully when I stop in this week he will be there, the plan is to get a couple roots to grow here before they are gone.Not enough people like horseradish these days.
