Once more, this evening, dinner will be a sort of Iberian fish stew: Blue mouth fish (a relative of scorpion fish) - (in yesterday's spicy sauce) served with basmati rice and a mango & cucumber salad with coriander, cider vinegar, rice vinegar, fresh lime juice and olive oil.
So are you combining the leftover stew with todays rice? Sounds good to me, haha.

The stock from the stew; this was all that remained, - & I decided to keep it, - as all of the fish & vegetables had been consumed, devoured, eaten, yesterday.

However, this evening, I added the rest of the fish I had defrosted yesterday - for I had used but half of it, to what remained of the still spicy & tasty stock.

The thing about such a stock (stew) is that it tastes even better on the second day.

And served rice, and a salad, whereas yesterday, I had added new potatoes to the stock.

Preparing dinner: Fried rice - yesterday's rice, day old rice is better when preparing fried rice - (with egg, carrot, onion, French onion, peas, garlic, soya sauce, oyster sauce, kecap manis, rice mirin), & a tomato salad (dressed with olive oil & aged balsamic vinegar).

Dinner has taken the form of a Greek salad: Cherry tomatoes, diced cucumber, red onion (very finely chopped), black Moroccan olives, aged feta cheese, (diced), drizzled with olive oil & served with toasted pitta bread.

A dish (copper roasting tin, French) of vegetables has just been placed in the oven (pre-heated).

In the copper roasting tin are: Cherry tomatoes, an aubergine (eggplant), courgette (zucchini), red peppers, onions, carrot, all roughly chopped, plus a head of garlic (unpeeled), all drizzled generously with olive oil & seasoned with sea salt & black pepper.

When ready, they will be served with focaccia bought today.

Sounds tasty; I assume that garlic also featured?

Hah, when I said quick I mean QUICK... so no, not even any garlic! I overbooked myself yesterday and was hell-bent on catching up in the tiny space between realizing I was hungry and thinking "like, NOW."

Today, garlic, yes. Homebrew fast food two days in a row is not all that appealing even in summer.

The single word "garlic" on my shopping list in anticipation of tomorrow's visit to the farmers' market does not tell the casual reader that this actually means the purchase of at least ten heads (or bulbs) of garlic.

I thought it was fairly normal to buy 10-30 heads of garlic once or twice a month. Actually headed to buy some tomorrow, alongside a few pounds of shallots, onions, potatoes and other root veg.

Chinese onion is a huge favorite of mine. It's very mild, like a leek but more onion and garlic like, with a subtle almost sweet flavor. It works well it soups and stews.

I went shopping this morning in the farmers' market, & nearby shops (the cheesemonger, the French bakery).

Therefore, my evening repast was a simple but tasty cheeseboard (Roquefort, Bleu d'Auvergne, Gorgonzola, St Nectaire, Taleggio, Brie, & Comte), with fresh French bread, & fresh fruit, all from this morning's shopping expedition.

4 slices of rye bread - one with cheese, two with slices of chicken salami cold cuts and the last one with smoked ham also as cold cuts.

That was my breakfast, lunch and dinner. Coffee and water for the rest - might operate a cup of hot cocoa later as it is Saturday after all. :)

edit... the slice of rye bread with cheese and smoked ham had some cucumber slices on them for dramatic effect.

Yum Yum, I love charcuterie and cured meats and can nosh on them through(as) all meals. One of my favorite noshes includes:

Chorizo Cantimpalo
Jamon Serrano or Iberico
Salchichon Gran
3yr Manchego
Something soft like Boursin
Cornichon or small gherkin
Young Castelvetrano
Dried extra sweet tangerines
Homemade rst garlic crostinis
Goose liver pate (Foie if it's the holidays or something more modest like Trois petit cochon varieties for everyday eating)
Rillettes (smoked duck is my fav) A.) if I want to save some money on Foie and B.) I have some in my pantry.

Pair that with some Stiegl or dry Gewurztraminer or crisp Vinho Verde or sharp rose' cidre and Oh mah gosh I'm in heaven. I usually build this up for holiday feasts or gatherings of close friends who know us and our tastes well (and enjoy them). There's just something absolutely fantastic and nonchalant about the unpretentious nature of a buffet style charcuterie board, well crafted crudite' etc. and libations that I love & enjoy.


Well, that and doing a big Paella with friends or family over a firepit of nicely curated coals. That's a ton of fun as well :D

Chateau moi, dinner shall be prawns with homemade Marie Rose sauce, (mayo, ketchup, sriracha, Yorkshire relish, (pimentón) - smoked, sweet, Spanish paprika, lemon juice, a little cream, sea salt, black pepper), & homemade aioli (garlic mayo, which comprises organic egg yolks, minced garlic, olive oil, sea salt & black pepper), roasted potatoes, & a tomato salad (organic cherry tomatoes, with organic parsley & drizzled with Italian olive oil).

I can't keep up with these fancy dinners 😁 I'm glad somebody is culinary in a kitchen(I'm not sure I am writing that out correctly)

"Good in a kitchen and can figure out how to make a good, healthy and tasty dish" is essentially what I mean.

Hands down most of the best foods IMO are modest in ingredients & simple in process.

Like a quality Artisanal bread & cured meats. Drop in some cornichon, gherkin or olives & I can get down on that every single day.

Looks great. Love sword fish.

Dinner tonight was Fresh cheese ptortellini pomodoro with yesterday’s leftover grilled red pepper chicken sausage & grilled Sweet corn diced up & thrown in & finished with some butter & heavy cream.

I would’ve taken a picture but we ate it all. Oh yeah topped with some Pecorino Romano.

Something that's sort of like a tabbouleh but without the grain and cucumber and skipping cumin spices.

Three or four sliced Greek olives, I used Kalamatas, about half a cup of diced sundried tomatoes (the kind packed in oil, with a couple scant tablespoons of the oil) half a cup of finely chopped parsley, a cup or more of riced or anyway finely chopped cauliflower florets, a generous slosh of white vinegar, dash of sea salt and a couple grinds of black peppercorn.

All tossed, covered and let to marry up flavors in the fridge for awhile, then served after 15 minutes out of the cold...alongside some crusty white bread brushed with a little olive oil and garlic and run under the broiler. Just right for a solo summer supper.

Pasta: The sauce shall comprise of finely diced carrot, onion, garlic (around ten cloves), - all organic; plus, finely chopped pancetta, roasted cherry tomatoes, and a small mug of peas.

The pasta shall be cooked in stock, to which salt & olive oil shall be added.

Preparing pasta: Very finely diced onion, carrot & (around ten cloves of) garlic have been sautéed gently in olive oil; cherry tomatoes roasted & added. Pancetta sautéed, & peas also added.

Now, the pasta shall be added to boiling, salted water, water to which stock & olive oil have also been added; a cup of water/stock from the pasta cooking water shall be saved & added to the sauce.
