Chicken (free range, organic, ethically raised etc), with vegetables (onion, garlic, carrot, and red pepper), and apple.

This is a Spanish recipe, or rather, one sourced from a Spaniard.

Pleasant, easy, gentle (and tasty) cooking for a cold November afternoon.
 
Chicken (free range, organic - better taste, better aroma and a better life for the bird in question) is being sautéed at the moment, and the aroma is wonderful.

Carrots, onions (diced), garlic and red pepper (also diced) are also to be sautéed.

A cup of stock, and sherry vinegar will be added. As will a few cooking apples, sliced.

Then, into the (preheated) oven for a while.
 
Bacon and bean soup with noodles and pancakes.

Now, that is something to which I must give some thought.

I will ask the carer for details of what is in the freezer, and I must take my mother's needs (and her dementia) into consideration.

But, what is currently crossing my mind, is something akin to a mixture of your beans and bacon, and the excellent "Made In Spain" by Miriam González Durántez - which has a most interesting lentil soup (with bacon and chorizo) recipe.

Reading it, it seems easy enough to prepare (and it reads as though it should be tasty and soothing).

I've just checked: I have everything (I think) that I need; lentils, (puy lentils), leeks, onions, garlic, carrots, red pepper, pancetta, chorizo, sweet smoked paprika, stock, and parsley. I might tweak the recipe and add some potatoes to the stock, as my mother likes potatoes when prepared in that manner.

The ingredients for tonight's dinner (Spanish lentil broth) have already been laid out; I find this useful, as otherwise, one may run the risk of forgetting something (a step, or an ingredient) when one is well underway.

Thus, the lentils (Puy lentils) are soaking in water.

Pancetta, and Iberico chorizo are put to one side.

Carrots, a leek, a head of garlic, onions, and half a red pepper are laid out. As is the Spanish sweet smoked paprika (pimenton); stock. Olive oil and parsley.

And - a tweak that is not in the original recipe, - but one does not need to adhere religiously to such things all of the time, we are merely looking to prepare something nice to eat for ourselves - some potatoes will also be added, as Mother loves potatoes cooked in stock.

Dinner is now in the oven, - where it will spend the next hour - after a most relaxing hour preparing and sautéing the various ingredients.

For vegetarians, I will say that this is an excellent (tasty, and healthy) dish if you leave out the pancetta and (Iberico) chorizo.

Mother loved her dinner (her bowl came down wiped clean, proudly shown by the carer); I had two helpings - this was a very tasty meal, and the carer is now tucking in to her own meal - she had put on some rice to cook, in addition to what we had.

Great ideas, I had salad for lunch (so I’ll pass tonight) but there is roasted vegetables. So yay!

Well, do enjoy.

Fish and chips (or roasted potatoes) is considered a classic for a very good reason; while I will happily tuck into rice or pasta with many things, battered fish call for chips, (French Fries to Our Transatlantic Cousins), or crispy fried, or roasted potatoes. They just do.

I generally do that (fish and chips) and would agree, but I am eating prepared food first this week.

Sometimes, with fish, I will parboil potatoes, and then finish them off in the pan.

One or two recipes (in that Spanish cookbook) - must try them out next week - feature either a whole fish or fillets of white fish resting on a bed of potatoes, onions, and tomatoes (with olive oil, naturally) in a roasting tin, the fish placed carefully on top of the roasted vegetables for the final ten minutes of so of the cooking process.
