For fun, productivity, creativeness and professional polish, my favorite app hands down is BeatMaker... especially now with the latest update!
I used to love AirSharing, but then realized it was very one-dimensional. Get iStorage instead - this is a killer app. Pricey, but well, well worth it.

All of the X-Plane games, Peanut Butter Jelly Time, Sol, TWC (The Weather Channel), JellyCar, Midomi, Subway Shuffle, Solebon Solitaire, MobileFiles, Trism, Koi Pond, and Enigmo.
Sorry more than one favorite, but it's hard to choose from so many different apps that do a variety of things.

Bloombeg for business.
Pandora for music.

1. Jaadu VNC (screensharing works like a charm for osx)
2. fring (skype & Voip client for the iphone) works also over 3g (Cydia)

4. Insomnia (stay connected after screen turns off) (Cydia)

1. Games - Scrabble and Monopoly. I also like Asphalt 4
2. Productivity- Rainbownote - my google docs to go, I use it extensively.
3. Remote- I love it and actually edit my playlist via remote rather than my slow desktop.
4. App Sniper - I got Scrable, Monoply and Asphalt 4 for $4.99 all because of this baby!
5. Facebook- Very nice and easy to use. Almost like the full version.
6. Amazon- Product ratings, pricing and comparison never made easier.
7. Pandora and AOL Radio are also wonderful.
Jailbroken- Winterboard and Mx Tube
The one App that I must have is my MAIL app. lol I am an avid emailer.

- MxTube - Download YouTube rather than re-streaming.
- Installous - *cough* Evaluate software before purchasing *cough*
- Cycorder - Record videos from the camera
- Facebook - Not a perfect app, but it's the best mobile app for it
- Stock app - Cry about how much my stocks have lost in the last few months.

Instapaper - saves web pages in text for offline reading
The BBC News - could definitely use some improvements, but downloading all the articles in the morning when I'm hooked into power saves battery life later. I can also read the articles anywhere I don't have access to the net.
Wikipedia - most of the wikipedia articles wthout pics right on my iPhone. App would be even better with added features. It's pretty basic, but offline access to wikipedia articles is great for loading time, battery life, and also when I don't have access to the net.
Wikipanion - I can download any article missing from the Wikipedia app and access that article offline, and it's great for viewing articles better viewed along with the pics.
