The quad will do everything you're looking for and more

They appear to be Dual 2.5 ghz processors (thats two single processors not two dual processors).

I'm thinking like $200 a piece maybe a little more maybe a little less.

Apple's 5870/5770 work perfectly and off-the-shelf PC 6870 cards work without flashing. I'd say pretty decent cards.

I thought the 5870 was a bit of a performance downgrade from the 7300. OSX on the 7300 on my 2006 Mac Pro seemed to be slicker and ran cooler. Definitely more heat and power usage under the 5870 and OSX just a bit slower. However, the 5870 most likely gives me a big performance lift in gaming. I can still run new games (bioshock2, CODMW2) at max.

This thread isn't about 2006 Mac Pros anymore. The OP figured out that those machines he has are Power Mac G5s.
 
Have the Power Macs on hand, seems like one had a liquid cooling leak although it still works. Rest seem to be running fine.
