Any thoughts of what Apple could bring to make us love their products again? To bring excitement back?

What do you mean “again”? I love my iPad Pro 2018, my iPhone X, my AirPods, my Macs.... Last time I checked these were all Apple products.

And yeah, I had the original iPad and was amazed by it. But it was, actually, iPad Pro and the Pencil that really blew me away. And current Pro is the best iPad yet.
 
I have had every, single iPad made with the exception of the 9.7 2017, and I had the first two generations of iPP 12.9, and now have the 11".

I owned the first two minis, and have bought mini 4s for my grandkids.

I LOVE iPads - it never ceases to amaze me how far we have come. I think I'll always be excited about new Apple tech!
 
For me, the Apple Watch did that, and I felt the same excitement with the new version released last year. AirPods were similarly exciting. And the new iPad Pros, though iterative, are exciting in that they speak to the original vision for the iPad more clearly than any prior device.

That's not to say I have no gripes with current Apple. The Mac side of the house has become seriously boring, and I'm not crazy about the current direction the iPhone seems to be taking. But I'm not feeling what the OP seems to be feeling.
 
Who bought the first generation iPad and thought it was a magnificent piece of technology? It was something new and something to be excited for. It was what Steve Jobs said it was. It brought new ways of reading the news, using the internet, using photos. It certainly was not a need but a want that made things we didn’t know we wanted to be wanted and of course the ease of use.

Any thoughts of what Apple could bring to make us love their products again? To bring excitement back?
I never thought it was. First time I picked up an ipad 1st gen I said "wow that's damn heavy".
Was never interested in ipad until the much lighter (and with smaller bezels) air.
And even from then, Ipad hardware has come a long way.
Current ipads are exciting, not the first one... Ipads are the product that has improved the most after Steve Jobs IMO. You may be excited by the novelty effect, I am excited by what I can do with them. And there is a lot I can do and hopefully a lot more to come with IOS 13 (if anything can be criticized with ipads it's the fact the IOS hasn't kept pace with hardware improvements)

Apple could produce a high quality product in a market segment where others either failed or had weak offerings... like they did with the iPod or iPad. (I don't consider the iPhone in that group since I had far more flexible and powerful smartphones before the iPhone)

The iPad blew people away, not only because it was far and away better than previous tablets, they did it at a price that was 1/2 of what the analysts were expecting.
