After some research, I decided that selling the M1 Mac mini is not worth it as I would be losing $350-400 in value (they are selling for $750-800 for a 16 GB/512GB SSD) and I would need to buy another Mac mini eventually to replace the 2014. In other words, I am just turning the M1 Mac mini to another file server and moving the Plex and iSCSI stuff to the M1. The 2014 Mac mini will remain as a backup server.
What are you currently using as your iSCSI initiator on the 2014 mini? I'm using globalSAN but I gather it hasn't been updated for Apple Silicon. I'm afraid when I transition the server, I may have to bite the bullet and purchase ATTO Xtend, which is something like $200....

Yes, I had to bit the bullet since it seems that they aren’t updating it for Apple Silicon. There is the Daemon Tools iSCSI initator, but I heard the performance wasn’t that good.

How's the ATTO iSCSI initiator working for you - still happy with Monterey ?

Daemontools looks slower than *******...

Cost isn't that big an issue - it just needs to be rock solid.
