Contacts and phone. 🤔 aren't they the same thing or am I missing something? can easily look at my contacts via the phone app.

Not really. If I am looking for other info I have stored in Contacts I do not want to go through my phone to get to Contacts to find it. That's just an added step. I store a lot of additional info in some of my contacts that I deal with on a tech level for my job.

What’s there as standard. I like to change anything I can on my iPhone and ipad but I’ve always kept the icons on the bottom the same.

Before iOS 14 it used to be messages, safari, mail and music from L to R. Since iOS 14 I have been trying to embrace widgets—although I find them not very useful for the most part. 8 favorite apps go under a 4x4 (or (1) 2x4 and (2) 2x2) and then 27 of my most used apps go in the folders you see.
 
Calendar, OmniFocus, messaging apps and safari though with widgets might remove calendar and OmniFocus
