I just press the update button.
However, when my IPad 3 was running like crap on both iOS 8 and 9, someone suggested I do a fresh instal and it's been running fine on iOS 9 ever since.

I hit update, let the phone do it's thing OTA, and once it's finished I go about my business as per usual. Never had a problem with this method, so I don't really see a need to construct a more intricate ritual around the act of updating my phone.

Looking forward to installing 9.3!

I'm updating my iP6 to 9.21 tonight, itunes says 6 hours to download the os. Its crawling, my internet connection is usually medium speed. not sure if its me or itunes. is there a faster, direct way?

Download the file from ipsw.me and install it through iTunes either in DFU mode or by hitting the update button on iTunes.
