Running virtual machines (via Fusion or Parallels) is a very good reason for more RAM. Sure, they will run with only 8GB, but more RAM will by used if you have it to make the vm's run much smoother. On my previous machine with 32GB, I saw as much as 20GB being used running 2 vm's at the same time. This is one of the reasons I just upgraded my new Mini to 32GB. Other programs will also use more RAM if it is available, providing smoother operation.
For general uses such as a browser and email, perhaps a few other programs, on 32GB machine my typical RAM usage is around 6-7GB. On a 16GB MBP, the RAM usage in similar situations is about half that. If extra RAM is available, it will be put to use.
