Trying to find a 16GB memory MBP 13. I see that the 8GB models are littered everywhere, in stock for same day pickup at my local store. 16GB models available...December 24th? Are THAT many more people going for the 16GB model or did Apple just not produce as much?

Just like previous models, stores only keep default configurations. That said my local apple store did carry a 1tb 16gb air and pro.

I have seen 16gb 1tb configurations randomly show available for pickup at apple stores. Mostly gray but no silver.

Apple Stores only like to carry the default configurations it seems. I originally bought a 8GB RAM M1 MBP and picked it up immediately. Then a few days later changed my mind for a 16GB model and now I have a delivery date of Dec 23rd. Doesn't bother me much as I have until 1/9/2021 to return the 8GB model so I'll just keep playing around with it until the customized one arrives.

I'm trying to get a 16GB MBA, but keep seeing the shipping dates pushed back every time I check.

Using a 16GB M1 Pro right now, however I ordered it about 5 minutes after they were released. I think the custom configurations are a lot harder to come by in store.

16GB is a CTO option. Some Apple Stores and Apple Authorized Resellers will carry some popular CTO configurations, but they're typically not as plentiful or as common.

As above - Apple stores pretty much just carry the stock configs, although a few SG 16/1T models do show up for in-store pickup.

This is how I bought mine - I set the config in my cart then checked for store pickup a couple times per day until one was available at a distance I was willing to travel.

yep as @macnmac said, Apple Stores will mainly stock the standard configurations of the M1 Air and Pro. They do get limited supplies of 16GB RAM CTO models, but they only come with 1TB SSD in the UK.

I guess I am really confused why the 16GB, at only $200 difference, is not the default option? Especially when it is still well-below the cost of the i5 models and the memory plays so much more of a role in these laptops.

Why? Simple. Marketing / Product Placement 101: don't give away something many/most users won't need/appreciate - especially when some will pay extra for it.

Couple other things to remember:

The two-port Intel MBP models also were 8GB base, 16GB max upgrade. Only the four-port Intel MBP models were 16GB base, with a 32GB upgrade available.

So far, only the two-port models transitioned to Apple Silicon. The four-port Intel models remain available to buy if you want one. Presumably they will transition sometime in 2021.

80% of the people these entry level Macs are targeted at would not see any significant difference with a 8GB M1. Apple's new M1 architecture is more memory efficient as the Apple Silicon Design is optimised for MacOS code. So for the same RAM capacity as Intel the M1 can handle more.

I picked up my MBA 16GB/1TB last week. This configuration is certainly available for pickup every now and then in my area (Seattle/Tacoma) for both MBA and MBP.

Same issue here in the UK - there were some last week but I was slow off the mark. I can only think that they are waiting for a shipment to come in before restocking the 16gb/1tb in store models. But when that is, who knows! Does anyone have an idea as to how frequently stock hits stores?

In my area, I see the 16GB/1TB available for pickup at least once a week...

16GB with 1TB storage in Space grey seems to be a standard configuration that stores carry. It just the stock is horrible right now. I saw one available at an Apple store about 1.5 hrs away. I should have gotten that one but waited too long and now there are none around me.

I have an MBA 8GPU 16gb/1TB Space Grey on order.

Is the stock you see when ordering online for pickup the same as what's available if you walk in off the street? As in, even though it's not listed for pickup, would they have stock in store anyway?

16gb/1TB is a BTO. It will be available in all stores.
