Then you'd have to run non-ECC RAM, while the Xeon gives you the option of using ECC if required. It won't matter for many people though.

Also a bit off topic, my Mac Pro came with a Genuine Apple HD 4870 (EFI), can I use this in a normal PC? I ask because I upgraded to a EVGA GTX 680 (EFI), and would like to use the old 4870 in another PC.

I had weird temperature issues when I put my Mac 4870 into a PC. It might have just been my setup, but I had to manually adjust the fan all the time.
