I wish I could have found a clear folio case for my 6th gen iPad.its white and gold and wish the gold could be seen more.
I've seen them on Amazon.

This weekend I traded in my wife's 1st gen 12.9 Pro (was a hand-me-down from me) at Best Buy because it was suffering from touch disease (they gave me $250 for it) and got her a 6th gen in gold. That's a very nice gold color... a bit of pink/red tint to it (almost coppery) that is nicer than the gaudy yellower gold of my Lenovo Yoga Book.
 
I have a silver iPad Air with white bezels and a 6th Gen iPad in Space Grey with black. My iPhone is Space Grey with black (note the UK spelling of grey - my iPad doesn’t like the American version!!).
I think on balance I prefer the black bezels although thinking about it won’t keep me awake at night.

I find that the silver model looks better than the Space Gray model, making it look larger because of the white bezels.

PS. In some studies white bezels lead to lower production due to the eyes being drawn away from the center of the display.

Does anyone else find this to be true? Also, I know that technology (for the most part) is gender neutral, but would it look weird for a guy to have a silver iPad? That question isn’t meant to start anything, I just want some feedback out of genuine curiosity.

Even if you believe in gender-specific colors (and, really, why would you limit yourself that way?), making silver and white gender-specific would be taking things really far. Colors like white, black, silver, and grey are about as neutral as you can get, which means you'll be fine. In my household, my iPad is white and my wife's is black, just because those are the ones we chose.

On your other question, I don't think silver/white makes the iPad look bigger than grey/black, but for some reason I do like that look on iPads. For MacBooks, I always gravitate toward Space Grey. I'm not really sure why those are my preferences, but I've always been happy with my choices. My advice would be to buy the one that grabs you.

I am definitely leaning towards the white bezels, but am still undecided on the Air vs. the Mini. I know that if I get the Air, I will love the screen but be complaining about its size. If I get the Mini, I will love the size but be concerned about it being too small to be able to handle iPadOS.
 
Yes, unfortunately Gold only comes with white bezels. Gold with black bezels would be my preferred combo, but since that’s not an option I get space gray on everything.
Gold body with black bezels does indeed look nice. (the Lenovo Yoga Book I previously mentioned has this combo)

I'd really like to know what Apple's reasons are for limiting the black bezels to a single body color.

I see forum members here are equally divided on these colors. It probably ultimately doesn't matter all that much as most will use a case for protection. There, they can express their aesthetics with much more variety and choices. The bezel is slowly disappearing anyway.

I used to prefer white, but with the new Air 3 I went for Space Grey / black bezels, given that iPad OS will have dark mode.
 
Here is a very quick mock-up I did of the current silver iPad Pro. As you can see there would be a lot of visual clutter due to the various cameras and sensors up top. Plus black seems to be better fitted for slimmer bezels and “pro” devices.

Myself and my wife prefer strictly black bezels on everything. We both just got 12.9 iPads pro’s with black obviously.

I went back to the Apple Store today and looked at both the Air and Mini again. I am definitely going to go with the Mini as I find the Air to be just way too big. I want something in between my MacBook Pro and XS Max. I am leaning towards the silver model, but now need to decide whether to go cellular or not. Based on what I’ve read and how I know I’m going to use it, a cellular model doesn’t seem worth it. Does anyone have any experience with how using the XS Max as a mobile hotspot affects battery life?

It drains the battery a lot. If you’re someone that needs to go out and about with it a lot I’d go cellular.
 
I think black bezels look better, but I have white bezels on my smaller devices (iPad mini and iPhone) because it’s easier to find in the dark.

I prefer white bezels so I was upset when the 2018 pros were released with black bezels, and no gold! I have since sold my 11" pro and will stick with my gold mini 5 with a white bezel. Thinking of picking up an air 3 as well now that the pro has sold.
