I hope this shows all three drives.
The first one, I truly believe, is a nonsense APFS volume. Note that it has no data, and it's actually mounted on "/Volumes/Macintosh HD 1" while the other two are mounted as expected.
Here are my mounts from a Catalina system (not my iMac Pro) (I've removed my other external drives and system mounts)
/dev/disk2s5 on / (apfs, local, read-only, journaled)
/dev/disk2s1 on /System/Volumes/Data (apfs, local, journaled, nobrowse)
In your case, disk2s1 is mounted as an empty drive, and the other two are mounted just like mine above.
If you trust me, and have a backup, delete that first one (disk2s1 in your case, mounted on "/Volumes/Macintosh HD 1") and then reboot and they will renumber and you'll be back to normal. You can also rename the - Data - Data to just "Macintosh HD - Data" and it will continue to work correctly.

Ok, Sounds like you dodged a bullet. So you have Macintosh and Macintosh-Data appearing? All I care about is you are OK?
Again, I never had a problem. Both appear in Disk Utility but only one appears on the desktop.
