Why are Apple MacBooks so unreliable?
I think you've been very unlucky, as Apple traditionally does make products to a very high spec. There have been a few models that were poor, and these are usually the subject of recalls and fixes.

A few "Friday-afternoon" machines leave the factory, sure.

Without wanting to look like I'm shifting the blame: I'd suggest that environmental conditions are probably a factor in different experiences. Heat, dust, percussive shock (when setting the laptop down); who knows what else. But, anecdotally, some people do seem to have terrible luck with hardware.

I'd perhaps try to press a case for free replacement, depending on local statutory consumer laws. Otherwise, you might be well served by taking up AppleCare.

Remember, AppleCare is essentially a bet. You're betting Apple that your Mac will fail; Apple is betting you that it won't.

When it comes to quality, performance, nothing can beat apple. I am using MacBooks since 2016 I am handicap without it and I would never go to Windows Laptop again, I will still prefer Windows PC for desktop gaming.

This is my second MacBook, I had bad experience with my first MacBook Pro (15 inch 2015 model) too. After the warranty, its speakers started cracking, I replaced those speakers thrice and after a couple of months the same problem kept on repeating so I gave up and later started experiencing dead pixel issue.

My friend who is an iOS developer (Objective C) bought MacBook Pro in 2016-17 that had that touch bar. His MacBook few months after the warranty expired, his MacBook died couldn't power, the issue was with the logic board but apple service center refused to repair it. He kept that piece of brick for almost an year, then he went to some third party repair center, had to pay a premium of $800 change his motherboard and bring it back to life, within less than an year he had screen issue, first time flex gate second time it was the module.

I can only say you must be very unlucky. I've been using MacBooks for decades and not a single one has failed.
Don't bother doing the lottery. ;)
