To my knowledge, only Apple has the 16GB models. Best Buy doesn't even list any 16GB configs on their website, and I believe that also applies to Costco. Those BTO configurations are probably coming direct from the production facilities, which will cause delays in shipping because of the extra COVID protocols for packages coming from SE Asia.
erk .. even some production said in my country malaysia but even here very2 unknown stock /limited .
Yes covid pretty strict here.

truly if you are buying for the long term I think people would be better getting the 16GB
Really depends on needs.

I don't subscribe to future proofing at this stage of Apple Silicon's roadmap. Too early to tell if it is worth hanging on to M series machines for years on end.

With current Intel chip roadmap, improvements are coming on slowly. So there is not much point upgrading every few years.

Going by A series performance improvement trajectory, it is likely M Series will improve significantly each generation.

On top of that, new designs and new features are almost certainly in the pipeline.

I have ordered the Mac mini 16GB 2TB and have to wait till the end of Jan but Its worth it.
Time will tell if this is worth it.

8GB is fine for me, I suspected this would be the case after I no longer required windows VM's running on my late 2016 MacBook Pro. Daily I run Office 365 suite including Teams and a couple of remote support tools and this has continued on my M1, although I did go for the larger storage over the RAM upgrade. I have even been running my 2018 iPad Pro 12.9 connected via USB C, as a second screen through sidecar daily when working from home.

Had no issues running World of Warcraft on it either, had that running full screen, native res on the iPad display, you know, when its a bit quieter, haha.
