Depends on the media you want to carry on it.
I'm finding the 32 3g perfect. I have my music on the ipod touch though, so dont have to factor that in. I just bought the full version of air video and will use that for streaming video if needed.
I couldn't do a 16, and given your history of not upgrading for awhile, i'd go with at least the 32.
My 32 gig was the perfect size...until I upgraded to the 64 gig 3G. Now 32 gig would not be enough. I find that I use the storage available
32 gig wifi +3g plus apple case (if money's no issue 64 gig)
My personal experience is that I am using it more often than I thought. I bought mine a a recreational device (movies, browsing, games for the kids...) but now I use it almost all the time. I am a shrink/coach and I use it for showing educational videos, drawing diagrams, taking short notes, making appointments (synched via mobile me), e-mails.
For me it's not "magical", it's the rare combination of being extremely useful and enjoyable.

16GB for me I don't have lots of data to put on just a few videos and a lot of photos the photos are the only permanent data on at all times. I don't travel much so transferring stuff from my iMac to my Ipad is a breeze.
