S models are done. iPhone 6s to iPhone 7 to iPhone 8 proved that. I’m expecting iPhone 9 and 11 this year. If they choose to use Roman numerals, cool :).
 
People don't seem to have a problem when choosing a Mac, or iPad that don't include a number.

Do You know what the difference between the iPad/Mac and iPhone are? The iPhone is updated _annually_, where as the iPad and Mac are not, those are usually 18 months or longer before their updated. Plus, with Apple updating iPhone annually, they naturally degrade the older models with an iPhone having a larger number.

I think we will get the following

iPhone (6.1 LCD)
iPhone X
iPhone X+

The iPhone will be the entry level model like the iPad dropping the number designation.
The X/X+ will be the 'Pro' models in different sizes like the iPad Pro.

The numbering will soon get a bit odd...iPhone 15? iPhone 20 (XX)?
 
The "s" phones have often actually featured greater internal improvements. 5s from 5 featured the introduction of a 64 bit chip, as well as TouchID. The 6s doubled the RAM of the 6. The 7s... um... isn't a thing, but I guess you mean the 8.
Doubling Ram? Thats hardly an innovative improvement. Each variant gwts a new faster cpu.

4 introduced retina screen clarity.
4s Siri, snooooozzzzz
5 introduced first larger screen, and LTE, faster cpu, better camera.
5s touchID...
6 larger screen again, NFC ApplePay, 802.11AC WIFI.
6s ram?
7 remove headphone port
8 ? Snooozzzz
X OLED, FaceID, larger screen that is edge to edge, etc.

The s versions have no innovation.

Due to timing, and an unwillingness to buy a phone ever year (plus, early years were contract phones for $200 or $300). 3G, then 4, then 5, then 6, then 7+ so missed all s models. The 8 would have been an s model, but I went with the X instead.

I never used the word "innovative", but I think that the "s" models have often enjoyed a more significant spec/performance boost than their counterparts. It's not so much "tick-tock" as external focus/internal focus. Many people in fact favour the "s" models, seeing them as the perfected versions of each model.
