Are the new Mac Minis kind of picky on RAM? Or will any DDR3 be fine? Frys had a good deal on some Kingston and Im hoping I'm OK with it.

They shouldn't be. I wouldn't get cheap-quality RAM for it, but Kingston RAM should be fine. Just check the reviews before purchasing it. Also, make sure you get laptop ram and not desktop ram, as they won't fit in the Mac-Mini (uses laptop ram).

I remember old MacBooks could be picky. The reviews are good, for $20 after $20 rebate I couldn't pass it up. Thanks
 
I'm just a bit nervous, though. The PC I've been using is a powerhouse, so naturally this feels a bit slower. Will I be fine leaving the CPU alone?

Also, will the jump to 8GB be a night-and-day difference?

I have the 2.5GHZ model and it flies with 8GB, I'd imagine the base model would be much snappier.
 
I just did this with the base model Mac Mini 2011 and Crucial 2x4GB SO-DIMM 1333Mhz sticks and it's like night and day using the Mini. Completely changed my opinion on it.

Keep in mind I don't do video encoding, just some heavy Photoshop type work and it works wonders.
