Honestly, I don't know. I guess it could be possible if you have a NVME to USB enclosure to do the procedure outside your Mac using an external Windows PC.
If I Would have one I would try to see if Rufus is able to find both partitions in your NVME (Catalina and ExFat for Windows).

I do have one, I’ll try. I think that I have to substitute the boot64.efi file with the opencore one, before put the disk back into cMP, otherwise it may brick it. Is this assumption correct?

I'm plagued with Windows boot freezes when I use OpenCanopy. All drivers are updated to latest versions because I experience no freezes with the text bootpicker and had everything updated before I switched to OpenCanopy. Before I reinstall Windows using @cdf's method, I'm wondering if there is a fix for VirtualBox install? This part fixes the freeze (/compact /EA):

VirtualBox install is so much easier to complete, hopefully there is a fix. @startergo, I can start Windows in safe mode with networking even if the start circle animation is not present but I get no updates on a legal activated Windows 10 Pro. Internet works in safe mode. I can start Windows fine from VirtualBox.

I too have been plagued by Windows freezes and BSOD after around 4 clean installs using @cdf method, so I don’t think Virtualbox is your issue.
I think I have traced this to the Apple Bluetooth driver... I’ve upgraded my bt module so handoff etc works in macOS... I think my mistake was installing the driver for the 5,1 rather than the iMac Pro 1,1 as covered above.
Every BSOD has the error code “Page Fault In Nonpaged Area”.
My latest install is up and running fine as the only 3rd party drivers installed are for the gpu, teamviewer and macsfancontrol.
Obviously, I get no scroll on Magic Mouse or trackpad, and only left click works on the trackpad.
Bit wary of installing the iMac Pro by driver in case the whole cycle starts again.
Edit... I should note that everything worked perfectly when Windows was in legacy mode... followed all of the guides which said to install BC5 drivers and the BC6 app.

Bluetooth started to work, after installing the optional Windows Update. Magic Keyboard and Mouse 2 are now automatically detected. The mouse gestures are not working, but right and left click is functional. That unrecognized device is the Sonnet Allegro USB3C-2PM-E card.

Also FYI your unrecognised device is the upgraded Apple BT module as I also have this and don’t have a USB3 card

Can you report that to @cdf into OC thread? I think I narrowed down the issue to Bluetooth Magic Mouse/keyboard also. Ever4ything works fine and I can reboot many times until I update the drivers downloaded with Brigadier.

Edit, this is how I fix the Magic Mouse scrolling:

Install 7zip and Brigadier, then download the drivers:

brigadier -m iMacPro1,1
Open Device Manager and manually install the drivers for all unknown devices, from `/$WinPEDriver$` directory. To fix the Magic Mouse scrolling, right click on `/$WinPEDriver$/AppleWirelessMouse/AppleWirelessMouse.inf` and install the drivers.

Brigadier is just for helping to download the iMac Pro driver package, and the required wifi / bt driver is in that package.

There is no wifi ac / BT 4.2 for cMP form Apple, the 5,1 Bootcamp driver package does not contain the driver for your own upgraded hardware.
Hey there, I'm running a OSXWIFI Broadcom BCM943602CDP with bluetooth in a 5,1 mac Pro and am having a lot of stability issues connecting to my wifi in Windows 10, I've troubleshooted just about everything and am guessing it's the drivers. I'm currently downloading Brigadier and trying imac pro bootcamp drivers too, but wondering if those are the right steps to take and anymore insight? Thanks!

I had exactly the same problem weeks ago.
My solution was to install a fresh copy of Windows 10 in EFI mode using a ISO copy of windows 10
This was my procedure (very easy IMO):

I used a somewhat simplified version of this procedure yesterday for my install, since I also had access to a Windows UEFI PC. I already had the Windows 10 installer on a USB so I:
1. shutdown the PC
2. Installed the SSD I was going to use in the Mac in the PC
3. Booted the Windows 10 installer USB
4. Let Windows 10 partition and format the drive
5. Let this phase of the process finish, then, when it went to reboot at the end, I turned off the PC at the POST screen before the installer booted to continue.
6. Removed the drive from the PC, installed it in the Mac
7. "Windows 10 bootcamp" now showed up in OC, so I selected that
8. The installation process continued and completed and I had a fully functioning copy of Windows 10 Pro

I did not successfully update OpenCore to version 0.8.0, I replaced the EFI folder with the one that was in the OpenCore 0.8.0 package. As a result, Windows 10 no longer appears in the selection at boot.
Can I somehow restore information about installed Windows in OpenCore?
