iMac Pro Wiping a 2014 iMac?

I want to securely wipe a 2014 iMac that still has old data on it. I want to the best as possible make sure the data can not be recovered.

1. If I turn on File Vault and let it encrypt the SSD with the current data on it, will this data be completely unretrievable after rebooting to Disk Utility and just doing an erase from there?

2. From the Disk Utility window, it shows my Apple SSD SDM0512G and then indented under it Macintosh HD. Do I select the top most Apple SSD SDM0512G to do the erase procedure?

3. An Apple Disk Image also appears under Disk Images. Is this just the software installed so that after formatting it can boot to that?
