I'm using a Sandisk Ultra 240GB SSD in my Late 2008 MBP and an older Apple SATA I 256 GB SSD in my 2009 Mac Mini nVidia. The Sandisk has been working quite well for me. When I buy another Mac that uses SATA III, I'll probably get the Sandisk Extreme SSD, but I am open to what is available at the time, since so much will change between now and then.
 
I have a Crucial M4 and it works great.

One thing to keep in mind is that most SSD's will have faster write speeds if you get larger capacity; the Crucial 256 doubles the write speed of the 128 because it writes more data in parallel.

As for TRIM, you probably don't need to worry about it. The current generation of SSD's do their own garbage collection. So if you have a Mini that's left on all the time, the drive will pick up after itself. Plus, you can use the HDD for anything that requires creating and deleting lots of temp files.

My older Mini has an OWC drive which I can also recommend. They specialize in Mac support.

What about Crucials 500GB SSD? Would it be even faster than the 256GB?

no 256gb ssds tend to be the fastest. but the oem hard drive is walking around your block.

the crucial 512gb m4 on sale at amazon for 399 is driving around your block in a corvette. the mush kin 240gb enhanced chronos deluxe is driving around your block in a race car.

my point is the corvette (crucial m4 ) will crush your walk around the block speed. the small upgrade to a mush kin or an ocz speed wise ( the aventador) is not cost effective and the crucial almost never breaks down. while mushkin ocz do breakdown. A 512 gb ssd for under 399 is really nice price.

However, occasionally when the system is under load or there's heavy disk I/O it will freeze for about 2-3 minutes then just keep on ticking like nothing happened.

Haven't been able to figure it out. Never happened with the original drive, happens far less often after upgrading to 8GB RAM.

I'm just about to update my Mac Mini (2011, i7DC 6630M) with an SSD, I was considering a Intel 520 120GB or Kingston 120GB SSDNow V+200 Enterprise.

Any tips, tricks, advice or suggestions for install? (I'm thinking more compatibility and TRIM support (I'm a little unclear).

BTW sorry for going a little off topic.

There are two criteria that it needs to fulfil: 1. Must have a controller that does its own TRIM (e.g., Sandforce). 2. Firmware must be updateable ideally from Mac OS X, I’m not going to waste my time with Windows.

So based on that I’m looking at an Intel 520 240GB SSD. Does anyone know of any other SSDs that meet my criteria?

Intel usually uses a bootable CD (if you want)? as does Crusical. Isn't OWC the only vendor who offers Mac firmware upgrade from osx for certain devices?

I upgraded firmware on my old Intel SSD through a CD and I will do the same on my m4 as soon as I get an USB CD for my Mac mini but I have some hours left before it will reach 5k hours or whatever it was....
 
I've got a 128GB Crucial M4 waiting to go into my 2011 iMac 27" as soon as the brackets/cables arrive. Starting to think that maybe I should've ordered a different drive.
