It was working in 4K for me in earlier betas.
YouTube have been changing the settings for various device types over the last few months, as per the long running 4K thread.

It's gone for me, a new thread was started by someone to discuss it, rather than it being on here:
Funny, I was using that same video for testing - my 2018 12.9 only shows 1080p60, while my Xs shows 2160p60 HDR.
I assume this is YouTubes fault?? 4k and her was one of my main reason why I got iOs14 on my IPad Pro!

It won't as we have no control over this. It's all YouTube on their end. Throughout the beta period, we saw that they were enabling it and disabling it all over the place, not clear if by device, by user account, or what. We just have to wait for them to re-enable it again.
