I'm surprised at this too. I feel like they were light on big headline OS features and someone glommed onto this as a selling point. To me seems like just a new and very lightweight addition to the iWork suite, alongside Pages, Numbers and Keynote. It's fine and all, but the buildup was way bigger than what's delivered here.
This was just one feature in an OS point update. It seems like it got about the right amount of attention.

Am I missing something, or does Freeform not support LaTeX? This seems like one app that could really use it but I can't find it anywhere.

Not LaTex. The Mac version of FreeForm will let you save as a PDF but not everything exports as vectors. Shapes come over as vector curves but any pencil strokes are converted to bitmaps.
