I am lucky living in Bristol, UK we have two Apple Stores here, if one does not have it in stock then there is chance the other does. There is a space gray MBA 16GB, 1TB available for collection tomorrow at the store at Cribbs Causeway.
I live in Bristol, I ended up driving to Birmingham this morning to collect the MBA 16gb and then one in cribs becomes available later today ?

Ouch, that was a long round trip. Well at least you managed to get one :) Hope you enjoy, I have had mine for a month, love it.

I really a want a 13-inch M1 MacBook Pro but with the 16gb unified ram instead of the 8gb.

I’m so inpatient and I’m super annoyed they don’t have that option available in any store. Reps on the phone told me they don’t come out of their warehouses with the 16gb unified RAM and into stores.

I just needed to vent.
It's a CTO model. CTO models are only ever in stores in limited supply. I agree that they ought to have a 16GB standard model, but they don't, and that's why you have this issue.
This is not true as I was able to purchase a 16gb, 1tb Air and pickup same day. It really depends on the store and what gets shipped to them. It did take me a couple days to find one but I kept checking back and selecting all the color options for 16gb, 1tb until it showed a nearby store had one. I even got my AirPods Max this way. Checked the online store around 7pm, saw that one store had them in silver and a courier delivered them to me the very next morning.
Apple Stores and other retail outlets will have SOME stock of popular CTO models, but never as much as stock models and it's never a guarantee.

I check 4-5 times per day and still no luck.
Probably by this point stores really aren’t getting much extra stock. Apple supply chain is kinda FUBAR right now. AirPod Max, 3 months. Good luck finding any iPad you want. CTO intel Mac? Lol, wait until February. Same with M1. HomePod (OG and mini), several weeks. iPhone Pro, weeks. MagSafe accessories, several weeks. Regular 12, plenty in stock. AirPod Pro, plenty in stock. Got to wonder where all the new store closing’s stock goes. I can’t imagine it sits in stores unsold.

I would check early in the morning, about 6AM, that is when I managed to find a M1 MBA 16Gb on launch day.
... and as mentioned above, gotta check at other times too - when I was shopping in late November, stores showing no availability early in the morning would show availability at random times later in the day.

Checked a few times today (I have shortcuts set up on my phone) for the Space Grey 8GB/512GB, Silver 8GB/512GB, and Space Grey 16GB/1TB MBAs. None were available in store early in the morning before work today. All showed up as available when I checked shortly before lunchtime (first time I've seen the 16GB/1TB variant in stock). I think the Space Greys sold out quickly though as when I checked again after lunch only the Silver 8GB/512GB was still in stock.

I’m still unsure if I want a MBA or MBP so I’ll see if I don’t mind the weight of the MBP. I’ve been using as 2018 12.9 IPP as my primary device for the last two years.
The weight difference is negligible 200g. Its not a point of difference. But the MBA does have a better design for holding and typing imo and seems to 'feel' lighter.

yeah, I like the tapered design of the MBA. I’ll mostly be using this for minor photo editing, watching videos, surfing the web, etc so I have a feeling I’ll be going for the air eventually but given this showed up in stock, I figured I’d give it a try.

I think I have figured out the availability pattern of my local Apple store(s) based on a few days' worth of stalking their MBAs available to pickup (I created a shortcut on my phone so it's really easy to check).

From these few days' worth it seems like new stock pops up around 11am. My guess is that they open at 10am or so, get new deliveries, then make the newly delivered stock available for pickup until it becomes all reserved. How long the stock takes to run out varies though, the other day the 16GB/1TB MBA became available around 11am, and was still available in the evening before going back to unavailable when I next checked the next day; whereas today it became available for just a short period of time.

So I found an Air 16Gb/1TB at my local store - but still have to pay tax, could get the 16GB/512GB, for $200 less and no tax? Just trying to decide if I want more storage for $200. I need to check if I qualify for an employee discount as well.

No - Apple - In fact this particular Air is the best Air since perhaps 2011 era.

We have a 13" Pro (older) and m1 MBA here and it's incredible how much more enjoyable to use the Air "wedge" form factor is. One wouldn't think it from the small differences, but it really does matter.

I don't even know why they made the existing m1 13" Pro honestly. Should have waited on an M1 13" Pro with more ports and more differentiation from the Air if you ask me.

Probably right.

I still think they should have just done the Mini and the Air for the first M1's.

Crank 'em out and have 'em fly off the shelves.

I'm wondering if the Pro's are selling well. They are $100 off at many retailers, whereas the Air's are instantly out of stock all over the place.

I agree, in notebookcheck.net review they pretty much said the same

"All in all, the new MacBook Pro 13 M1 seems to be filler product that does not make much sense. We cannot find any real arguments to prefer the Pro over the new Air. We suspect Apple will eventually discontinue the entry-level MacBook Pro 13 in the not-too-distant future and only offer a single (and more expensive) MacBook Pro 13 (or maybe MacBook Pro 14) with a more powerful M1X processor."

If anyone is in the Atlanta area I noticed that several of the stores have the M1 16GB/1TB (MBA & MBP) in stock.
