Yes, the AI masking is game changing. I don't know if other programs can do the same, and I don't really care. I really missed Aperture and Capture One took me a year to master, but it is my DAM and my major editor. I do run Aperture with that funny adaptation thing, but it is frozen in time. If only Apple had realised that Video, Sound and Photo all need the same investment. We get FCPX from Apple. We get Logic from Apple. We get Photos. Photos is A Complete Rubbish :(

Not sure which version you stopped at, but the “AI” masking easily convinced me to upgrade. It’s not really anything you couldn’t already do with the fill mask brush tool, but just makes it a lot easier.

The version with AI masking is the last I bought, when I remember correctly in November 2023. After that there a no new features that I am interested in. And yes, I to like AI masking.

Capture One is at the point of feature maturity for me. I can’t think of much else that they can do that would move me.

I would like improvements regarding the DAM part, especially speed. Aperture was much better in this regard. And I would like an iPad App, that can access the library on my Mac, so that changes are on booth devices instantly. Geotagging could also use improvements (currently I am using HoudahGeo). And simple things, like an integrated update mechanism, without having to download manually. Or jpeg & raw pairs like in Aperture and a lot of other small things.

Sometime since the last version you licensed, they did integrate the desktop update mechanism so you no longer need to download manually. Syncing images/edits between the ipad app and the desktop isn’t there yet, though I believe they are working on it. Of course, doing that well is a very difficult problem indeed, especially if images aren’t stored centrally on one of the various clouds (not something I’d ever do from an editing standpoint, personally). You can now integrate things like styles and presets across devices, so that makes things less tedious if you use those very much. Personally, I was happy that they’ve made a start on layers in the mobile app (basic brush, linear, radial gradients) as well as adding levels and curves. They also added the ability to import and export from external drives on the ipad. Those are all good things from the point of view of how I work.

I have to say I do really appreciate Match Look from one of the latest desktop app releases. I didn’t think I would as I am not a heavy styles/presets user, but it’s a really nice feature to have as part of my editing arsenal.

I personally use Capture One since on Fujifilm cameras, they tend to work better...but there is Affinity Photo and now am looking at DxO photo as a replacement for Capture One since I haven't upgraded that for years. Also On1 Photo is another alternative.
