I think it depends how complex the office documents that you're using are i.e. you might be able to get away with using Pages 09 still etc.
I suspect it's probably the case that most people only use office features that were fully mature 10+ years ago.
Office is a pretty mature product anyway, with most of the new stuff in 365 being around UX, ML collaboration and cross suite features.
