Wow, am I glad I found this post. Since the upgrade to iPadOS 15 I’ve been feeling really alone in this issue. I searched a lot online, but somehow missed this post until now. I have the exact same issue.
For what it’s worth, I will share my experience with Apple Support regarding this issue here. I had an Apple engineer with whom I could share my screen, so he could see the issue for himself. He never saw anything like this, he said. We first deleted the Mail app, restarted the iPad and installed the Mail app again. No dice, still crashing. Then, on request of Apple Support, I wiped the iPad completely, to start from scratch, as if I had bought a new iPad. After this, I only configured the e-mail account. And everything went fine, the crashes were completely gone. Hence, concluded Apple Support, the issue is not iPadOS related, but there must be one of the apps I have installed that’s causing the crashing. And he left me with a ‘Good luck!’.
Since I didn’t want to download and (especially) configure everything again, I restored the latest backup of my iPad; and, of course, the Mail issue was back. I’ve been using the Gmail app since then. But I really hate it and would like to be able to use Apple Mail, as I’ve been doing since 2010.
Just a quick update. I’m on iPadOS 16 public bèta since yesterday, basically just to see if I can finally use Apple Mail again on my iPad. Since this all started with iPadOS 15, the thought that iPadOS 16 could perhaps fix it didn’t strike me as too weird a thought. Alas, the mail issue still exists.
 
I have written about this issue many times... still frustrating me. I just purchased a bluetooth keyboard to try and see if it is just the Apple magic keyboard that crashes the email program frequently... so far (one day) no crashes - if this continues, I will try to help Apple understand the error of their ways.

I didn’t get updates in my email when someone posted in this thread, so I had some catching up to do. The notion that the keyboard used with iPad could be the issue triggered me. I always use my iPad with a Bluetooth keyboard (Logitech ultra-thin or Magic Keyboard). Now, when I use Apple Mail with the keyboard switched on, regardless if I use the keyboard actually to type the email or the screen, the issue occurs. But when the keyboard is switched off entirely, so there’s no Bluetooth connection with the iPad anymore, the issue is… gone!
So it seems the issue is indeed related to Bluetooth. That’s of course nice to know, but not a real solution. A Bluetooth keyboard is an enormous added value of the iPad, not in the least when using mail. And the issue is obviously introduced with iPadOS 15, we didn’t experience this issue before that.

In my case, I don’t think that it is a Bluetooth issue. I have the Magic Keyboard and the problems with the Mail app occur with or without the Magic Keyboard attached. The only Bluetooth device that I have paired with my iPad Pro 12.9 are the AirPod Pro’s. I have tried turning Bluetooth off and the problem still persists. My old 10.5 iPad Pro doesn’t experience any Mail app problems at all.

The main problem that I have been experiencing with the Mail app are slow load times and the switching between Mail and Safari. I can click on an email that will open up in Safari. When I go back to Mail to read the next email, all of the emails are missing. The Mail app template will be there, but there will be no emails populated within the Mail template. The emails will eventually repopulate after about 20-30 seconds or so. With this going on, it takes forever to read 30-40 emails with having to wait the extra time for everything to repopulate. The Mail app will occasionally crash during all this. I have tried several suggestions that people have said might fix the issue, but nothing has worked so far.

Super bummer to here iOS16 didn't fix this!
 
oh man... the replacement bluetooth keyboard didn't solve the problem... is there another email client to use on the iPad that is not Apple buggy???

I updated to iPadOS 15.6 today. So far, the Mail app seems to be working properly for a change!
 
A quick update: since today, I’m on the second iPadOS 16 public beta. Now, the email issue is gone… But I know this can very much be introduced again in a future update.

Is this still the case or have the crashes returned? I haven't updated yet.

In my experience this issue occurs anytime a keyboard is connected - I don't use Bluetooth keyboards but I use both a Smart Keyboard and Universal Control from a Mac, and both situations tend to trigger the crash-on-send bug.
 
This bluetooth thing is wild. I was having the same issue on 15.6.1. I turned off my trackpad, and now it seems to work.
