I'm on EE and will need to do the same....did you unpair your old watch before setting up your new one and did you tap 'remove' or 'keep' the data plan when unpairing it?Well, that was the easiest set up ever. Watch was paired and set up within a couple of minutes. EE tech support answered the phone within five minutes and the young lady transferred my data plan and I was up and running on cellular within a couple if minutes.
Just need to pick up my new phone tomorrow at 9 am 🙂

Remove your old watch from the cloud.
Pair up your new watch and when it comes to ask for your data plan it will produce an error and ask you to ring 150.
Contact EE and go through to technical support for phones.
When they answer, tell them you want to transfer your existing data plan and not a new data plan. Give them the EID number Which is the longest number on the apple box.
when they’ve done that then go to the go to settings on your phone and you will see that is a prompt complete setting up your Apple Watch press that and it should show Sim plan activating. EE said it takes about four hours but it all seems to do it in less than 10 minutes. Once it’s activated then you can doublecheck it on your watch.

My understanding is that if you remove the data plan then you have to take out a new data plan. I upgrade my watch every year and ever since the series 3 I’ve always transferred the data plan.Different from yourself, but I called EE Tech yesterday as I was going to restore my Series 8 for selling
I told the agent what was happening (sold iPhone before unpairing 🫣) and do I keep or remove plan?
He said I can click on remove, and when you receive your new watch give us a call and we can add it back on.
Not sure what exactly Remove or Keep actually means…if you can get it back if removed

Yeah it’s not the end of the world if you need a new plan but I only pay £5 a month for mine and if I go to a new plan then it’s £7. Not a dealbreaker but….🙂Checked the account and my number is still there, I’m currently on hold with EE just to double confirm.
Not a big deal really, they would just create a new plan, it’s not as if I use the actual number for anything 😊

Not sure how that works because once the EID number is transferred to the new watch, then the old watch cannot work with that cellular plan because it isn’t associated with itKeep if selling as the new user will be able to use it. Not sure how that works though if you completely restore… but I did it the correct way, …something to keep in mind.
I’ve been paying for the series 7 monthly since release, only cancelled it today as I’ve traded it in.If paying for AppleCare+ monthly for watch, is there any limit to how many years I can pay this for?
Or is it only 2 years and then it stops?
