That is a whole other ball of wax, and a Mac Mini ASI is going to other issues there..

macOS plex can't do hardware accelerated 4k HDR tone mapping, so it will be very much YMMV

That would be with direct streaming only. But it's interesting on the HDR tone mapping.

To be honest, that's not my greatest issue since all my TV's at home are 4K, and use ATV's so it doesn't impact me at all.

What I like, however, is the ability to have 4K movies, but allow my parents and my sister to be able to stream them remotely (or if I travel). In which case, I only ever stream at 1080p, but that requires transcoding and this is where the M2 can cope with multiple streams without any slow down.

I also want to add, there's the power consumption too. My current Intel i5-7700K rig uses about 200w when it's struggling to transcode 4K streams. It manages, but can only do one at a time.

An M2 would do the same with a fraction of the power. Since this server is left on 24/7, this is also a great reason to use an Apple Silicon processor for a Plex server.
 
All is right with the world then. I paid roughly the same amount for my mid 2011 mini with 2GB of RAM 12-13 yrs ago (and paid extra for a Kingston 8GB RAM upgrade a little while after). Considering the M1 equivalent can be had for $100 less give or take, the mini's value proposition is still excellent I'd say
 
Even though I just got a M3 Air and I have a gaming PC with 12900k / RTX 4090... My M2 Mac Mini is still my most used PC. I'm typing this on it right now. I LOVE the Mini so much, so much bang for the buck. I have the 10/16/256. If I was doing it over I would get the Pro.
 
In a perfect world I’d be able to buy an Apple Silicon Mac Mini with a 16/512 configuration for less than $700.
I just got a Thunderbolt 4 enclosure with a 2TB drive for my Mac Mini. It's actually faster than the internal drive. It with 16GB RAM is sweet.
