To anyone who questions why you would want an iPhone without a data plan: if you're often on Wi-Fi and you don't care about data when you're not. That's exactly the situation I'm in with my iPhone 2G, which I'd like to give to my son.
At some point, it may have been possible to have AT&T remove the data plan from an account, but no longer. I've spent a lot of time on the phone with customer service reps and supervisors, and they say that they can't (or won't) do it.
The Fake APN method apparently does work. Though I don't doubt people who say that they've never incurred extra data charges after doing that, there's no guarantee that AT&T won't do that. As long as they can detect the type of phone you're using for voice, they have the right to re-instate the data plan on the account.
