I also had MX Master 3 and MX Keys but I switched to original Apple mouse and keyboard because of the lags. The Apple devices work very smooth without any lags.
I borrowed an old Magic Mouse, the one that uses AA batteries, and it seems to work perfectly. Hopefully the issues with the MX Master series get sorted soon.
 
I haven't had (m)any issues with my MX Master 3 and the M1. From time to time, my custom configs for the gesture, forward and back buttons stop functioning properly (or revert to default behavior?) in Safari, but a quick logout/login or restart resolves that. But that has only happened maybe 3 times, since I bought the M1.
 
Just added the MX3 keyboard and mouse two days ago.
Very happy with them both in action so far.
Build quality is excellent and switching between three machines, without a cable in sight, is a joy.

I got an MX Anywhere 3 and I love it. I use it with the dongle (not bluetooth) and today I've been noticing intermittent lag on my Mac Studio... the only thing I've changed is turning on the "displays have their own spaces" feature, because I'm troubleshooting a different issue.

Trust me, love will quickly fade away. Once you start working with heavily, you will see how it's soft surface will start absorbing all the oils from your palms and buttons become shiny. I am actually thinking of going for magic trackpad....
