As soon as Apple starts using multi-touch desktops that integrate IOS it will become 11.0

And that's the point where I completely give up on Apple. I hate touch interfaces and touch screens, and I don't want it invading my real OS. In fact, I just sold my iPad a month or so ago because it drove me crazy to use it. Sadly, I absolutely agree with you, though. It's going that way, and is inevitable.
As Apple is now the major player it should go with biggest name in cats.

I don't want to read too much into things but I kind of think this is true too. I mean, the king of the cat world is the lion (unless you want to go all ancient times and pick like a saber-toothed tiger). You can't really beat a lion...I don't think there's going to be a 10.8.
Me too. When it happens, I'm staying on 10.7, using it to the end of its life, and then buying an alternative machine.

You're certainly not alone. I'm completely against the idea of smushing OS X and iOS together.Wow, I was starting to think I was the only one who felt that way. I really don't like the idea of iOS and OS X converging.
I disagree. I don't think Apple will ever do it, not at least in this decade. Apple don't beat about the bush with where they plan on focusing on in the future, hence the sudden drop in what everyone calls Professional software. If Apple had no more plans to continue OS X, they wouldn't have brought a new version out with lots of new features (such as the App Store, the iOSsy stuff, additional security, etc). Why bother going to all that effort if you plan to drop it after that version?
Its clear to see that OS X are going to be rather iOS-esske in the future and the focus on Mac models is going to be portability rather than power, probably resulting in the dropping of Mac Pro, but not the Mac and OS X all together.
