For my mbp 1tb is a must. For my iPhone and iPad 256gb is fine. I do parallels with a development environment in Windows 10 and have all my data downloaded via iCloud on my mbp. But optimized iCloud photos for my iPad and iPhone. (120gb photos and videos)
 
128GB is perfect. I have about 250 apps and large games, several Amazon playlists downloaded, a large Anki course with audio files, an entire Duolingo course, a bunch of podcasts, and that’s about it. Using 80 of the 128GB. Everything else resides in the cloud and I call them up as needed—photos, movies, tv shows and videos included (but I pay the $3/month for the 200GB plan [or whatever it is] because my wife and I back our Mac, two phones, and both iPads to the cloud).
 
I have a 512GB on my 20018 12.9 Pro of which I am using 230GB now. I'm happy with the cushion and would likely buy the same size again, even with the support for attached storage. I don't use the cloud except for backups as I travel a lot to areas with poor or no Internet connectivity.

Can’t believe I bought the 512 gig version a couple years ago before this and actually thought I would use it. The cloud for me all the way baby

On my next iPad I’d like to have a local copy of my photos library, so I’ll probably go for 512 GB when the time comes.
 
I initially purchased a 64 GB iPad Pro 11'' then returned it for the 256 GB option as I realized I watch lots of movies during flights and needed the extra storage.
 
256gb for me for now. Apple would have to do significantly more improvements to file management before I would need more for photo editing/storage. As it stands now I don't store much by way of movies/media on it other than downloaded content from streaming services. I used to be into MP3 library curation and movie downloads but I ain't got time for that these days.
 
I currently have the iPad Pro 10.5 with 512gb storage. I could easily get by with a 256gb model, but when I got this I opted for the most storage I could get. I am planning on getting an 11" iPad Pro just deciding if I want to just get the current or wait for the 2020, and when I do I might consider the 256gb, but I see myself staying with the 512gb. I like to load it up with some movies when I travel so that is all good.

Just purchased the 11" iPad Pro, and stayed with the 512gb. I like to feel comfortable with the memory. One of my previous iPads was a 64gb and I kept running out of space. 512gb is plenty and in the almost 3 years I had the iPad Pro 10.5 I never felt the need I was running out of space and there were a few times when I was close to using 400gb or more. (when I travel I like to download a bunch of movies, books, videos and music for when I am on those long flights or just relaxing at the destination).

Honestly 32GB was fine on my 9.7 Pro. I just wanted a bigger screen. Bought the third gen 12.9 but the screen was very yellow, I couldn't adjust to no headphone jack, and it felt too thin. So I got a first gen mint 12.9 with 128GB on Swappa.

I only use my iPad for media such as Netflix, Prime Video, YouTube, etc.

Only positive of the larger size is if I needed to download movies for the event I had no internet connection.

32GB is all I need since I don’t have a ton of apps and stream all of my media. Anything with 64GB will last me for the life of the device.
 
My most recent iPad is 32GB and I've just come to realize that that's just not enough for my needs. iOS takes up nearly half that space, leaving me with only ~16GB or so for apps and files. It's amazing how fast that storage fills up. I think 64GB would be plenty, but just to make sure, I'm not going for anything less than 128GB on my next iPad. Likely I'll be getting 256GB. That will make sure that, as my needs may grow, I won't need to juggle what apps are installed and I won't need to worry as much about ensuring everything is stored in the cloud at every moment, which can be a struggle when you're using a WiFi only iPad and not always around WiFi or have a hotspot.

I try to estimate what I'll need and then get one size larger if feasible. It's like buying pants a size larger - I know I'll grow into it no matter what I'm thinking now.

I have an 11 Pro with 64gb. I use iCloud heavily so I have about 30 gb of leftover space. If you're not working with media files(photo, video, lots of drawing) I think you don't have to have a ton of storage. Looks like the base iPad has only two options: 32gb and 128gb. Take the 128gb. Anything below 64gb is dumb. But ultimately only you can decide how much you need.
This is an iPad forum. You said "11 Pro" (edited in bold) at the top. Is that an iPhone 11 Pro or iPad Pro 11"?
 
I have the 128GB and I use it to edit my photos while doubling as my card backup. Could only fit one full 64GB card together with all my other apps and stuff. So the next one I'm getting is the 256GB.
