Well, after I flash 10.0.2 over 10.1 beta 1 I see my music, but all my activity and healt data are empty. I can't even add anything to it :(. It looks to fresh start :(.

You would have needed an encrypted backup made from 10.0.2 or below to recover any health and activity app data.
 
Does iCloud backup use encryption for the health data backup? I wasn't sure so I used iTunes on the MAC to make sure.

You need to use iTunes for an encrypted backup (and you have to check the box specifically to select encryption).
 
Well, it's a new day so that means more speculating on when beta 2 comes out lol... let's hope it's today!
 
I walked into an Apple Store today and grabbed an iphone 7 to see what's the deal. The animations feel really weird, like ios 3, robotic, slow. Does 10.1 make things different?

even worse, 10.1 beta 1 makes iPhone 7 like a 5 year old phone its pathetic £920 for fastest phone on planet 7 plus and it feels so slow and choppy wish I kept my 6s plus now

Its a beta. You should not expect it to behave like a final issued piece of software. Perhaps we were spoiled by how polished the various iOS 10 betas were, but you have no real right to expect that for every beta release. As I mentioned yesterday, if you don't like the performance, downgrade to the public release of 10.0.2. But please don't post here about how a beta makes your phone not perform to the level you want it to.

for your info dude, I installed 10.0.2 and it was if not worse than the beta, I even restored back to 10.0.2 and the speed animation lag was worse so beta 1 didn't help but so is the final latest one, why should we have a phone like the 7 plus that doesn't speed better than the old 6s plus, you explain that to me thanks

Dude what are you talking about. You don't know anything obviously
 
I doubt beta 2 comes out and even if it does the iPhone 7 will still have slow animation :(
