but the album is downloaded I don't understand
It may be downloaded, but it doesn't have to be in your library. It could be part of a subscribed playlist which updates every week. You may want that playlist downloaded for offline listening while it's available, but you wouldn't want every song in it getting added to your library automatically.

Not exactly. You will get iOS 9.3.5 if you restore via iTunes unless you have the IPSW file from the dev beta. There is more to it but to answer you, you wont get iOS10 beta restoring from iTunes.
I just replaced an iPad Pro through Applecare. When I got the replacement today, I enrolled it in the iOS 10 public beta, since the problem iPad was running the beta. After installing the public beta today, I was able to restore my backup from last night. I did not need the ipsw file from the dev beta.

The person you quoted was talking to someone else about a restore directly through iTunes. Which you would need the .ipsw as iTunes cannot pull iOS 10 from the update server.

There's a setting in Settings > Mail under the COMPOSING header that allows one to "Always Bcc Myself". That's been there for several major releases... not sure if that's what's doing it for you. I am not seeing that behavior with the aforementioned option set to "OFF".
You are correct, I started with a fresh install on my old iPhone 5S and it seems that setting was default to on.
I disabled it and no more replies to myself.

Anyone else getting the bug where the Maps keyboard doesn't reliably come up? If you kill the app and restart, it will come back up as normal. Annoying when you want to quickly type in a destination for navigation.

Yes, this happens to me on occasion. Also occurs in some other apps from time to time.

I literally could not be more ready for the GM. Have been dying to get my hands on watchOS 3 since June but didn't want to risk my watch/health data. Can it be noon already?

I seriously hope the keyboard Safari '123' glitch is fixed in the GM.

WatchOS 3 isn't perfect but it is a HUGE improvement. I almost think it will be better for new buyers of Watch though because those of us who've lived through OS 1 and OS 2 have to retrain our brains to think, "Oh this thing is actually useful for apps now". I am really looking forward to seeing what devs do if they get on board with this.

I'm looking forward to Scribble, Dock, Find Friends and the new workout sharing.

Scribble really works. I hope that it's available to third parties (I'm really not clear on whether it is) because it makes limited text input possible and practical on Watch. Dock is just awesome and will be even more so when Devs update their apps to take advantage of the new capabilities there - speaking to at least on dev on the Watch forums shows that some changes will be required for real persistence and "liveness" there but the Dock itself does a good job of keeping apps running as-is.

Erase the betaprofile first?
No need. Downloading mine with the profile still installed. But if you don't want the next set of betas, you may want to delete it (not sure if the current profile would work for future betas though).

Can you erase the beta profile after installing the GM?
